When friends and family meet in the Caribbean and South America, empanadas are usually present as well. They are  easy and quick to make, and they are delicious. They are also available in several versions, so you can easily adapt them to the occasion or your taste. All this just to say you have no excuse for not  giving these mini empanadas a try.

They are a little different from traditional empanadas. They are smaller, and there is the cooking time as well, as these are mini empanada snacks. They go really well with garlic, onions, or other types of homemade dressing.

They are usually stuffed with minced beef or chicken, but like salads, they are actually like a free play. In other words,  you can fill them with just what you like! Similarly, you can choose to fry them in oil on a pan, or bake them. Either way, they retain their special, good taste.

These mini empanada snacks are rich in calories and protein, but the chef has a lot of leeway. You can even choose to make them healthier if you want; it depends on the quality of the ingredients and cooking method.

You can probably save a few minutes that way, but  if you think about your health,  you may be changing your mind.

You are probably aware that  chips and similar cases are full of processed fats and harmful MNG  (monosodium glutamate). MNG is an additive that in short gives you greater joy when you ingest it.

There is another, even more down-to-earth, reason to  opt for homemade empanada snacks.

What is it?

You get to see every single ingredient included and you are the one who decides what you put in your mouth, no one else.

The old adage “you become what you eat” is still true. But now forget the myths of all-or-nothing when it comes to eating animal proteins. Remember that it trades and portions and moderation.

Now you know the pros and cons (if you can call it that) of this delicious recipe, so it’s time to go into the kitchen. let’s spend a few minutes making  a snack that will make everyone say “uhmm!”

Note that these  mini empanadas taste much better with sunflower oil. But if you’d rather bake them, that’s no problem either.

Ingredients for mini empanada snacks

  • 1 tomato (110 g)
  • 1 tablespoon salt (25 g)
  • 1/2 red pepper (60 g)
  • 3 cups water (400 ml)
  • 2 medium onions (150 g)
  • 600 g minced meat
  • 5 cups cornmeal (500 g)
  • 3 tablespoons vegetable oil (90 ml)
  • 1 tablespoon unsalted margarine (25 g)
  • 2 tablespoons cumin (50 g)

Equipment

  • A rolling pin
  • 2 bowls
  • A frying pan
You can bake or fry your mini empanadas

Preparation of mini empanadas

  • Start by  washing all the vegetables. Let them dry and set aside.
  • Then chop onion, tomato and red pepper.
  • Then sauté the vegetables in the margarine.
  • Immediately add the minced meat, along with the salt and cumin. Mix it well and give it medium heat for 5 minutes.
  • Then it’s time to make the dough Put the water and cornmeal in a medium bowl, with a little salt.
  • Then just make it into a soft, malleable dough.
  • Take a handful of dough and roll it flat with the rolling pin. Then take an appropriate amount of the filling and place it in the middle.
  • Fold it to half size and close the ends with your fingertips. Put them on a hot pan with oil, fry on both sides and that was it!
  • Enjoy your mini empanadas alone or with a little sauce (choose your own favorite). Bon appetite!
