  • Olive oil
  • 1 leek
  • 3 garlic cloves

  • 1 or two celery stalks
  • 1 cup condensed milk (200 ml)
  • 4 poached eggs (1 per person)
  • 1 packet of bacon (120 g)

Instructions

  • Peel and cut the onions into cubes.
  • Then peel and slice the carrots and leeks.
  • Bring the water to a boil. Before it boils, add the peeled garlic cloves and turn down to medium heat.
  • When the garlic begins to give up their characteristic aroma, add the carrot and leek.
  • Then heat a pan over medium heat with a little olive oil.
  • After 4 to 5 minutes, add celery to the pan and let everything cook for approx. 15 minutes.
  • Season to taste.
  • Meanwhile, sauté the onion in the pan.
  • Cut the broccoli into small pieces and steam it.
  • Add the water from the broccoli to the pan with the other vegetables. In addition, add the milk and blue cheese. Stir well and remove from the heat.
  • Then add the steamed broccoli to the mixture and blend with a hand-held blender on low speed.
  • Then the eggs are poached and set aside.
  • Before serving, cut the bacon into small pieces and fry it for a few minutes in the pan you used for the onions. Add the poached eggs and you’re done!

Ingredients (2 servings)

  • A pinch of sea salt
  • 1 broccoli head
  • 2 large onions
  • 1 medium potato
  • 2 cups water (500 ml)
  • 1 tablespoon olive oil (15 ml)

Instructions

  • Cut the broccoli into moderately small pieces and steam it. When al dente, remove it from the heat.
  • Then preheat a pan with olive oil on medium heat.
  • Peel, wash and slice the potatoes.

  • 3 celery stalks
  • 1 large broccoli head
  • 2 tablespoons chopped onion (30 g)
