1. Oatmeal cookies with nuts and honey

Ingredients

  • 150 g oatmeal
  • 150 g chopped nuts
  • 2 tablespoons honey (50 g)
  • 120 g wheat flour
  • 200 g butter
  • 2 teaspoons baking powder (10 g)
  • 2 teaspoons cinnamon powder (10 g)
  • 1 1/2 teaspoons salt (7.5 g)
  • 100 g sugar

Cooking

  1. Start by mixing all the ingredients until you have a firm dough and shape it into a ball.
  2. Then wrap it in cling film and let it cool in the fridge for an hour.
  3. Then take it out of the fridge and divide the dough into small balls of the same size. Press them together to form cookies. Place them on a sheet of parchment paper.
  4. Bake them at 180 degrees for 20 minutes.
  5. Take them out, let them cool on a rack and serve.

2. Oatmeal cookies with chocolate

Ingredients

  • 150 g cup of oatmeal
  • 75 g chocolate buttons
  • 100 g icing sugar
  • 1 egg
  • 100 g white sugar
  • 100 ml of milk
  • 1 teaspoon vanilla extract (5 g)
  • 100 ml of olive oil
  • 50 g flour
  • 1 pinch of salt

Cooking

  1. Preheat to 190 degrees.
  2. Use a spatula or wooden spoon to  mix all the ingredients in a large bowl.
  3. Then use a spoon to make balls that are the same size and thickness. Place them on a baking sheet with parchment paper, or one with silicone coating.
  4. Bake them at 190 degrees for 20 minutes.
  5. When they start to turn golden brown, check with toothpicks in them to make sure they are not raw in the middle.
  6. If the cookies are ready, take them out. If they are not, cover them with aluminum foil and give them 2 more minutes. Be careful not to burn them.
  7. Take them out of the top and  let them cool on the plate. Then place them on a wire rack, taking care not to break them.

Ingredients

  • 100 g butter or margarine
  • 100 g sugar
  • 120 g wheat flour
  • 1 egg
  • Vanilla extract or cinnamon
  • 50 g oatmeal

Cooking

  1. Preheat the oven to 180 degrees with hot air.
  2. Next, whisk the butter or margarine with the sugar  in a large bowl until you have a creamy mixture.
  3. Put the egg in and continue whipping.
  4. Add vanilla extract or cinnamon.
  5. Add the oatmeal.
  6. Then add the sifted flour little by little.
  7. Knead the dough with both hands until you have a firm mixture that does not stick.
  8. Shape it into a ball and  put it in the fridge for 15 minutes.
  9. Then smooth out the dough with a rolling pin on a table sprinkled with flour.
  10. Cut out the dough with the cake templates you like best. Place them on a baking sheet lined with parchment paper.
  11. Bake them for 15 minutes, or until the cakes are golden brown.
  12. Carefully remove them and allow to cool before serving. You can possibly make them more festive by using icing, crushed cinnamon etc.
